Superfood: Spirulina
Spirulina is a blue-green algae. The name is derived from the Latin word for “helix” or “spiral”; denoting the physical configuration of the organism.
Spirulina contains an unusually high amount of protein, depending upon the source. It holds 65 to 71 percent complete protein, with all essential amino acids in perfect balance. In comparison, beef is only 22 percent protein. Spirulina is a complete protein. It can also easily be added to smoothies. The color impact will be bright green, reminiscent of the ancient oceanic shores, and the taste impact is minor to none.
The Japanese both produce and consume more spirulina than anyone else. Some researchers claim that Spirulina is useful in helping diabetics control their food cravings and decrease their insulin intake. Spirulina is believed to have been a food source for the Aztecs and other Mesoamericans until the 16th-century and may have an even longer history in Chad, as far back as the 9th century Kanem Empire.

To top it off, spirulina is one of the few plant sources of vitamin B12. B12 is usually only in animal products. It wouldn’t hurt for vegans to add spirulina to their diets. A one gram tablet could provide more than three times the recommended daily intake of B12.
